Fish Cakes

I LOVE fish cakes. The combination of fish and crispy breading to me is absolute perfection! Do tiny ones for appetizers or larger ones for entrees.

Ingredients

  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 2 green onions diced
  • 1/2 onion finely diced
  • 1/4 dried chili flakes
  • 2 tbsp fresh parsley roughly chopped
  • 2 cups mashed potatoes (don’t add the usual cream & butter, just cook them soft & mash)
  • 3 cups cooked white fish (flaked)
  • 1 tsp capers finely diced
  • 3/4 cup fine bread crumbs
  • 1 egg
  • 1/2 tsp dijon mustard
  • 1/3 cup vegetable oil for frying

Preparation

Combine all ingredients except bread crumbs. Mix well and form into patties. Let them sit in the fridge for at least 15-20 minutes (they stay together better)

Take patties and coat fully in bread crumbs and fry in small batches on med heat until crispy.
