Fresh Bread Crumbs

Have you ever looked at the ingredients on a package of bread crumbs? Don’t you find it weird that there are half a dozen more things in there besides bread? This is why I make my own.

Whenever french bread goes on sale, or the day old stuff is available I pick it up and make bread crumbs. Chop the bread into small squares (about the size you would use for stuffing) Spread the pieces on a baking sheet, cover with a tea towel and put somewhere out of the way until it’s all dried out. Throw it in an air tight container until you need it. It can also be ground in a food processor to make fine breading for fish or meat, etc. Season crumbs as you use them depending on what they are being used for.
