Fish Cakes
I LOVE fish cakes. The combination of fish and crispy breading to me is absolute perfection! Do tiny ones for appetizers or larger ones for entrees.
Ingredients
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 2 green onions diced
- 1/2 onion finely diced
- 1/4 dried chili flakes
- 2 tbsp fresh parsley roughly chopped
- 2 cups mashed potatoes (don’t add the usual cream & butter, just cook them soft & mash)
- 3 cups cooked white fish (flaked)
- 1 tsp capers finely diced
- 3/4 cup fine bread crumbs
- 1 egg
- 1/2 tsp dijon mustard
- 1/3 cup vegetable oil for frying
Preparation
Combine all ingredients except bread crumbs. Mix well and form into patties. Let them sit in the fridge for at least 15-20 minutes (they stay together better)
Take patties and coat fully in bread crumbs and fry in small batches on med heat until crispy.
