Easy Lemon Chicken Bake
Baked lemon chicken is one of those comfort recipes that you can throw together in a few minutes and just pop in the oven and forget about.
Feel free to sub out the green beans for whatever vegetable you happen to have on hand. You can also use chicken legs or even breasts but the bone in pieces work best as they add a ton of flavor.
Ingredients
- 6 Chicken thighs
- Zest and juice of 1 lemon
- 2 Tbsp chopped parsley
- 1 tbsp chopped thyme
- 4 cloves garlic rough chopped
- 1 onion diced
- Handful of green beans
- 1 1/2 cups white rice
- 3 cups chicken stock
- Salt & Pepper
Directions
Dump everything except the chicken and vegetables into a casserole dish. Mix everything well, top with vegetable and then nestle the chicken thighs on top, cover with foil and bake at 450 for 45 minutes. Uncover for an additional 15 minutes (to crisp up the chicken thighs.)
Now EAT!

Total time: 1 hour and 15 minutes
Yield: 6 servings
