Roasted Fennel
Once these are roasted you could chop them up to add to a salad, saute them soft as a side dish or just grilled like this. You can also add a small sprinkle of garlic powder but I prefer the straight taste of fennel.
- 1 fennel bulb trimmed
- 2 tbsp olive oil
- salt & pepper
- 1 lemon
Trim off fennel stalks, cut in half length wise and dig out hard center. In a small bowl mix lemon, salt & pepper and oil. Brush liberally on fennel halves and grill until nicely charred and still firm on a med grill.
