Sausage and Roasted Vegatable Tart

Sausage and Roasted Vegatable TartI use pre made rolls of pastry because I suck at baking. You can make small or large tarts depending on personal preference. I prefer medium sized ones for appetizers.


  • 1 pre-made pastry roll (find them in the freezer section)
  • 1 red pepper
  • 1 yellow pepper
  • 4 hot Italian sausages
  • 1 onion
  • 2 cloves garlic minced
  • 8 cherry tomatoes
  • 3 or 4 sprigs of fresh thyme
  • 1 sprig fresh rosemary
  • salt & pepper
  • 1 beaten egg white


Grill of fry the sausage until almost cooked through. Just before they’re done the garlic & onions and cook for 5 minutes. Remove from heat and slice sausage into small pieces. Char peppers slightly on a hot grill (or under the broiler)Rough chop all veggies into bite sized pieces and add to sausage, onion and garlic and mix in rosemary & thyme, salt & pepper. cut circles out of thawed pastry and place a heaping spoonful in the center of each. Fold up edges so filling is exposed in the center and brush pasta with beaten egg. Bake at 325 for 20 minutes.
