Herb & Lemon Pork Tenderloin
Mmmmm…….. I love this one. Easy but so warm and yummy. I prefer to cook the tenderloin on the BBQ but the oven will work just as well (at about 375 for 17 min or until just slightly pink in the middle).
Ingredients
- One pork tenderloin trimmed
- 2 tbsp fresh chopped thyme leaves (and a couple of whole branches for garnish)
- 2 lemons
- 2 cloves garlic roughly chopped
- Salt & pepper
Preparation
Grate off zest from half of one of the lemons and then cut it into wheels. Take the juice from the other lemon, the garlic and thyme and mix. Season pork well with a good dose of salt & fresh pepper then coat in lemon thyme mixture making sure to get all sides. If doing it on the BBQ place your lemon wheels on the tinfoil, put pork tenderloin on the wheels and pour over remaining sauce and wrap up in a little foil package. BBQ on medium hot grill for 8 minutes each side. If you’re doing it in the oven, place the lemon wheels at the bottom of a shallow pan & bake covered.
