Lemon Basil Halibut
I love lemon and basil with fish- nothing pairs better or is easier to whip together- as long as you don’t over do it. You want to enhance the delicate flavor of the fish, not hide it.
Basil Lemon Sauce
- 7 or 8 fresh basil leaves
- Zest and juice form 1 lemon
- pinch of salt & pepper
Blend all together and puree until semi smooth.
Fish
- 2 thick firm pieces of fresh halibut.
- 1 lemon sliced into wheels
- Salt & pepper
Lay lemon wheels on tinfoil. Season fish with salt & pepper and lay on top of lemon wheels. Spoon lemon basil puree over top and wrap up into foil packages. Grill on med bbq for 7-8 min (or 350 oven) until cooked but flaky. Spoon extra cooking liquid over fish for serving but use sparingly so you don’t overwhelm the halibut flavor.

Cook time: 8 minutes
Total time: 18 minutes
Yield: 2 servings
