Bruschetta
This classic is an old favorite of mine. It has the perfect combination of garlic and tomatoes and that great fresh bite of basil and Parmesan cheese. Sliced olives are an excellent addition to this Bruschetta recipe, as is grilled chicken or fish. I prefer to use cherry tomatoes as they hold their shape well and produce a little less juice and seed, but any kind of tomato will work.
Ingredients
- 20-25 small cherry tomatoes sliced lengthwise
- 2 cloves garlic finely diced
- 6 large basil leaves finely diced
- 1/2 onion diced
- 2 tbsp fresh grated Parmesan cheese
- 2 tbsp olive oil
- Salt & pepper
- 4 slices toasted french bread
Directions
Heat olive oil in a large skillet and saute onions and garlic over medium heat for 5 minutes. Add tomatoes, season with salt & pepper, and saute for another 10 minutes. Toss in basil in the last minute of cooking and then top over french bread. Sprinkle with grated Parmesan and enjoy!
