Easy Chicken Stew

For many people, stews are the ultimate comfort food because there is something warming about a rich and creamy bubbly pot of delicious! This one is really easy and great for large gatherings with lots of hungry mouths to feed! My perfect side dish for this rustic and simple chicken stew is roughly mashed parsley potatoes and a little crusty fresh bread.

Ingredients

  • 4 cups chicken stock
  • 2 cups diced chicken breast
  • 1 tbsp fresh thyme rough chopped
  • 2 tbsp fresh parsley rough chopped
  • 1/2 tsp fresh rosemary rough chopped
  • 2 sage leaves chopped fine
  • 1 medium sized onion diced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 2 cloves garlic, diced
  • 1 bay leaf
  • 3/4 cup chopped green beans (or peas)
  • 1/3 cup cream
  • 2 + 2 tbsp butter
  • 3 tbsp flour
  • Salt & pepper

Directions

Melt 2 tbsp butter in a large pot and add celery, carrots and onions. Saute for 10 minutes on medium heat. Add garlic and fresh herbs, salt & pepper and continue over medium heat for another 5 minutes. Remove everything from pot and melt other 2 tbsp butter and then sprinkle with flour. Stir well to make a thick paste- adding a small amount of chicken stock if needed. Once flour and butter mix is smooth and lump free, slowly add remaining stock. Add celery mix back to pot as well as diced chicken pieces and green beans. Let simmer over medium high heat for 15 minutes- or until chicken is cooked through. Season with salt & pepper and add cream for last minute of cooking. If you prefer a thicker stew, add more flour or thicken with mashed potatoes.

Cook time: 45 minutes

Total time: 1 hour 10 minutes

Yield: 4 to 6 servings
