Cheesy Scallop Potatoes
Potatoes and cheese were simply MADE for each other. this is a perfect side for ham or roast or even a roasted chicken. It’s creamy and cheesy goodness.
Ingredients
- 3 large russet potatoes
- 1 clove garlic
- 3 tbsp flour
- 4 tbsp butter
- 2 1/2 cups milk
- 1 tbsp Dijon mustard
- I small onion
- salt & pepper
- I cup grated cheddar cheese
Preparation
Wash and thinly slice potatoes (I leave the skin on) and then rinse very well.
Dice onion and garlic and mix together.
In a sauce pan add flour to melted butterĀ and then slowly add milk and mix until smooth. Add mustard and salt & pepper. Stir until sauce thickens.
In a casserole dish, put down a complete layer of potatoes, sprinkle with onion and garlic mixture, cover with thickened sauce and sprinkle with grated cheese. Continue these layers until dish is full, leaving about an inch up top so it doesn’t boil over. Salt & pepper, cover and bake at 350 for 60 minutes.
