Peach and Basil Sauce

Salmon with Peach and Basil Sauce

Basil is one of those great herbs that goes brilliantly with fruit, especially peaches or apricots. I’m using this sauce on salmon here but you could also use it on chicken. It’s very basic and super easy to make.

Ingredients

  • Wash, peel and pit 2 large ripe peaches (or 5 or 6 apricots)
  • 7 fresh basil leaves
  • salt & pepper
  • sprinkle of chili flakes (optional)

Preparation

Throw everything in a food pro and blend it until slightly semi smooth.  Then heat slowly in a sauce pan. Bake/fry or broil salmon or chicken as you normally would and serve covered in peach sauce.

Pretty easy huh?
