Grilled Plantains
These little babies are freaking DELICIOUS. Serve them with rice & beans, jerk chicken, whatever.
Buy firm plantains. Colour wise just imagine you’re buying slightly over ripe bananas. Slice them up about an inch thick and fry them on medium heat in about a table spoon of butter and a sprinkle of salt until browned. Don’t use low heat as they will be mushy before they are nicely browned. Depending on what you’re serving it with you can add cinnamon, paprika or brown sugar.
