Easy Oven Pulled Pork

This recipe for pulled pork, out of your own oven, takes a bit of time with an overnight refrigeration then a long slow cook BUT is definitely worth the wait…

I used a pork butt roast (or Boston butt) about 4lbs or so. That made more than enough pulled pork sandwiches for dinner and left overs for lunches.

Ingredients

  • 1 pork roast

Dry Rub

  • 1/4 cup brown sugar
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 1/2 tbsp smoked paprika (don’t use regular- this is where you’re going to get that smokey flavor from)
  • 1 tsp mustard powder
  • 1 tsp chili flakes (optional)

Wet Ingredients

  • 1 cup apple juice
  • 2 finely minced garlic cloves
  • 1/4 cup apple cider vinegar
  • 1/4 cup bbq sauce
  • salt & pepper

Directions

First, make the dry rub and apply liberally to pork roast then let it sit overnight in the fridge.

The next morning, let the pork roast sit on the counter for at least an hour to get meat up to room temp. Place in 275 oven and DO NOT TOUCH IT for 1 hour. After an hour pull it out and add the wet ingredients.

Dump it all in the pot and put that baby back in the oven for another 5 or 6 hours or until it falls apart under a fork. Shred the meat and use the juices- a little bit at a time- until it’s the texture you want. Add extra BBQ sauce to taste and serve on rolls with coleslaw. And there you have a wonderful pulled pork done in your own oven.

Cook time: 7 hours

Total time: 22 hours (includes the overnight refrigeration)

Yield: 4 to 6 servings
