Bacon and Sweet Potato Soup
Comfort food to me is soup or bacon so when the two are paired, it’s a beautiful thing. This is perfect for cool evenings in front of a fire. It’s thick enough and filling enough to serve as a meal. And it’s very easy to make.
Ingredients
- 4 slices thick cut bacon cooked until crispy
- 2 sweet potato roasted until soft or 1 med sized squash
- sprinkle of nutmeg, brown sugar, smoked paprika and salt
- 1/4 cup heavy cream
Preparation
Combine all ingredients except 1 slice of bacon for garnish in a food processor. Puree until a thick but smooth soup is created. If soup is too thick add an extra splash of milk or cream. Top with remaining bacon and enjoy.
Prep Time: 10 minutes
Cook time: 40 minutes
Total time: 50 minutes
Yield: 2 to 4 servings
