Fresh Pesto & Chicken Linguine
It’s PASTA-FEST in my house right now- it’s been raining like crazy here and I love pasta when the weather is gross!!!!! Because I have a giant and very happy bush of fresh basil in my backyard I decided a little pesto was in order. It’s super easy to make yourself by either buying a big bag of it or growing your own. My fresh pesto recipe is here- if you haven’t already tried it you’ll be shocked at how simple it is. I’ve served this with a grilled chicken breast but prawns would also be excellent. And don’t forget a little fresh bread on the side.
Ingredients
- 2 tbsp + 3 tbsp Fresh (or purchased) pesto sauce
- 250 gr Linguine noodles
- 2 Chicken breasts
- 5 Cherry tomatoes cut in half
- 1/2 white onion diced
- splash of olive oil
- 2 tbsp Fresh grated parmesan cheese
- Salt & pepper
- Fresh basil leaves for garnish (optional)
Directions
Coat the chicken with the first 2 tbsp of pesto and let sit in fridge until ready to grill. Start salted water for pasta and cook according to directions. On medium heat, saute diced onions in splash of olive oil until transparent and then add cherry tomatoes. After 2 minutes, add pesto sauce and good dose of salt & pepper and turn off heat so it’s just sitting in the warm pan (you’re only trying to heat it, not cook it. Drain pasta and then mix pesto mixture into noodles. Serve with grilled chicken and garnish with grated parmesan and basil leaves.

Cook time: 15 minutes
Total time: 30 minutes (includes the overnight refrigeration)
Yield: 2 servings
