Prosciutto and Basil Breakfast Sandwich
This is a very fast but delicious breakfast or brunch treat. It’s easy but looks impressive.
Ingredients
- 2 thick slices bread (I like sourdough)
- 4 slices prosciutto
- 4-5 fresh basil leaves (I didn’t have any so I used basil paste in this picture)
- 2 eggs
- shaved Parmesan
- salt & pepper
Preparation
Poach egg to desired softness. Crisp prosciutto under broiler on high. Toast bread under broiler as well. Spread basil leaves (or paste) on toasted bread. Cover with crispy prosciutto and poached egg on top. Finish with shaved parm, salt & pepper.
