Easy Gazpacho
There is nothing better than cool but spicy bowl of gazpacho on a hot summer day and today I was definitely craving it. I looked in the fridge but didn’t have all the “traditional” ingredients, but honestly, that’s never stopped me before. Use what you have handy, as long as you love all the flavors, it’s going to be fantastic! Great for a cool lunch or a first course for dinner.
Ingredients
- 1 lg can whole tomatoes (and juice)
- 1/2 red onion
- 1 handful of fresh cilantro
- 1 handful of fresh parsley
- 1 red pepper
- 1 jalapeno
- 2 cloves garlic
- salt & pepper
- a good dose of hot sauce
- the juice of 1 lime
- a couple of pieces of toasted bread (day old is fine)
Directions
Throw everything into a blender or food pro and whip it up until it’s a nice slightly chunky soup consistency. Let it sit in the fridge covered for a few hours so the flavors can meld together and when you’re ready to serve, use chilled bowls and top with toasted bread pieces. See? Delicious doesn’t have to take forever!
**A great addition if you have it on hand is adding some cooked but cold shrimp.

Cook time: 0 minutes
Total time: 15 minutes + 2 to 3 hours refrigeration time
Yield: 2 to 4 servings
