Perfect Sauce for Pork or Chicken
This is one of those stand by recipes that can jazz up a plain chop or breast and make it something fabulous. Just a couple of perfectly paired ingredients and VIOLA! You have some serious deliciousness on a plate. This serves 2 with enough to drizzle over the vegetables so double or triple it as needed.
Ingredients
- 2 pork chops or chicken breasts
- 1 tbsp butter
- 1 tbsp oil
- 1 tbsp diced capers
- 1/2 small onion finely diced
- 1 tsp dried thyme
- 1/2 tsp dijon mustard
- 1 clove garlic finely diced
- 1/4 cup beef/chicken or vegetable stock
- zest & juice of 1 lemon
- salt & pepper
Directions
In a large pan, brown the chicken or pork in the butter & oil. Add half of the stock, cover and simmer until cooked through 8-10 minutes. Remove meat, turn on high heat and add remaining stock stir all other ingredients and let reduce slightly. Pour over pork or chicken and enjoy!
