Easy Twice Baked Potatoes that the Kids will LOVE
Not only is this one always a kid favorite, but it’s also really easy AND you can stuff these little babies with whatever you want! (FYI- this is the perfect way to sneak in a little broccoli or spinach and they’ll never know it!) Swap out the listed ingredients with whatever you have on hand and try something new- this is a perfect recipe to get rid of leftovers. And if you want to be extra fancy-schmancy, use a piping bag to stuff them in a decorative way. If you don’t have a piping bag- a regular old sandwich bag with a hole cut in one corner works just fine as well!
Ingredients
- 1 potato per every 2 people
- 1/4 grated cheddar cheese
- 1 heaping tbsp diced onion
- 3 cloves roasted garlic
- 1 tbsp diced parsley
- salt & pepper
Directions
Bake the potatoes (wrapped in foil) on 350 until tender, slice potato in half lengthwise and then allow to sit and cool until you can pick it up. Scoop out the flesh leaving a thin layer behind (to allow the potato skin to keep the “cup” shape.
Mix all ingredients together with scooped out potato flesh and return filling to potato skin. Bake stuffed potatoes at 350 until hot all the way through (about 10 minutes) and then directly under the broiler on high until the top is golden brown bubbly goodness.
