Easy Chicken Fricassee
You can’t go wrong with chicken. Add a creamy, buttery sauce and you have a winner. This Chicken Fricassee recipe is simple enough to pull out on an average weekday, and yet delicious enough to feel like a weekend meal that you slaved over. It’s not exactly “low fat” but C’mon….. you gotta live a little now and then, right? Think how boring life would be without a little bit of butter & cream.
Ingredients
- 8 Pieces of bone-in chicken (large thighs work great)
- 2 tbsp Butter
- 2 tbsp oil
- 2 1/2 cups chicken stock
- 12-15 small Pearl onions
- 1/2 cup Dried mushrooms soaked in 1/4 cup boiling water
- 1/2 cup Heavy cream
Directions
Saute chicken pieces in butter & oil. In a separate pan, simmer chicken broth, mushroom liquid, mushrooms & pearl onions while chicken is cooking. Pour over chicken, simmer for 5-10 minutes until chicken is cooked through. Remove everything from the sauce, reduce by half, add cream and pour over Chicken, onions and mushrooms.
Prep Time: 10 minutes
Cook time: 20 minutes
Total time: 30 minutes
Yield: 4 servings
