Easy Steak and Peppercorn Sauce

Perfect for a luxurious date night meal- one that won’t have you slaving over the stove all night. This peppercorn sauce is so creamy and rich and velvety that you won’t believe how simple it is to make. Serve this slathered over BBQ’d or pan seared steaks with simple parsley mashed potatoes and green beans. You have no idea how much of a treat you’re in for!

Ingredients

  • 1 fillet steak per person
  • splash of oil for cooking
  • tbsp of better for cooking
  • pinch of salt to season the steak before cooking
  • 1 cup beef stock
  • 1 tbsp sour cream (or creme fresh or even plain cream)
  • 2 tbsp green peppercorns rough chopped

Directions

You can do this sauce separately and add it to a steak you have cooked on the BBQ but it will not be nearly as good without the pan drippings so it’s best if you cook the steak in a med/hot pan in the oil & butter then remove the steak and de-glaze the pan with the beef stock. Let it cook on medium until it reduces by about half add the peppercorns and cream and stir until blended. Pour over steak (and potatoes) and enjoy.

** You can use regular black peppercorns but they are dried. The green ones are sold in a brine and therefore are softer and make for a smoother sauce.

Makes sauce for 2 to 4 steaks
