Tomato Bocconcini Salad
This is a classic salad that is both very easy and very delicious. I make several versions of tomato salad with basil as I love the combination of flavors and it’s a fantastic appetizer, side dish, or even a snack. Add or delete your favorite flavors to make it exactly what you like. You can use any type of firm tomatoes but I prefer romas for their size, shape and texture (lots of tomato meat and little seedy gush).
Ingredients
- 2 or 3 firm roma tomatoes sliced into wheels (depending on how many servings you need- assume 3 pieces per person.)
- One slice of bocconcini per tomato wheel
- One small basil leaf per tomato wheel
- 2 tbsp both olive oil & balsamic vinegar.
- Fresh ground pepper & salt
Preparation
Stack the tomatoes with the basil and cheese and drizzle with oil & balsamic. Top with salt & pepper and serve cold. You can make this a head of time, just don’t add the salt, pepper, vinegar & oil until right before serving.
Prep Time: 10 minutes
Yield: 2 to 3 servings
