Fresh Pesto Linguine with Scallops
It doesn’t get any easier than this. A quick, easy and delicious linguine flavored with a bit of pesto sauce. Add whatever veggies and meat that you like as this works well with chicken, seafood (scallops, shrimp, muscles or clams) or even as a vegetarian dish. Use bright veggies sauteed to still slightly firm for this gorgeous & super delicious pasta recipe.
Ingredients
- 1 julienne red pepper
- 1 tsp chopped capers
- 12-15 large scallops
- 7 or 8 snap peas
- 1 tsp chopped fresh parsley
- linguine noodles
- Fresh pesto sauce
Preparation
Saute the veg in a small splash of olive oil. Add the scallops and saute on med until cooked through. Heat the fresh pesto sauce and mix into scallops and veg. Toss in cooked linguine noodles and top with parsley.

Cook time: 12 minutes
Total time: 22 minutes
Yield: 2 to 3 servings
